It’s soup season and my Sweet and Savory Roasted Butternut Squash Soup is just what you need for a healthy comforting low effort meal!
Butternut squash is rich in vitamins, antioxidants and fiber, supporting immunity, digestion, heart health, and stable blood sugar, while its low-calorie content aids weight management and overall wellness!
Ingredients:
- 32 ounces of chopped organic butternut squash
- 1/3 cup maple syrup
- 1 cup coconut milk
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1 tbsp salt
- 1/2 cup granola (topping)
- 1/2 cup agave syrup or honey (topping)
- 1 apple (topping)
Recipe:
In a large pot, boil your chopped butternut squash until softened (approx 10-15 mins)
Add the butternut squash to the blender with the coconut milk, maple syrup, cinnamon, nutmeg, and salt. Blend until smooth, adding in more or less coconut milk to your desired consistency.
Cut your apple into thin slices and sauté in a frying pan on medium heat with a little bit of olive oil until browned.
Add your soup to a bowl, garnish with drizzled honey, sautéed apple slices and some crunchy granola. And enjoy!
